Bacon-wrapped grilled chicken breasts with a "running" filling :)

Hey Folks,

Although some will disagree with me, I do believe a combination of cheese and meat is one of the best things ever. So here's my holy trinity - chicken breast, cheese and bacon, and when all that goes on the grill... Well, you know

Ingredients (4 portions):
  • 2 whole skinless and boneless chicken breasts, cut in half
  • 12 thin slices of bacon
  • 2 oz ground or shredded Parmigiano-Reggiano cheese
  • 2 oz ground or shredded Swiss Gruyere cheese
  • 2 oz ground or shredded mozzarella cheese
  • 2-3 tbsp extra virgin olive oil
Ok, so here's the toughest part - put the chicken breast half flat on the cutting board. Then, with a sharp knife, cut a deep pocket in the chicken breast parallel to the board. Make sure you don't cut through - you need that pocket to stuff the cheese in.

Mix all the cheeses in the bowl, and stuff all the chicken breast halves. Then - wrap each half in 3 bacon slices and secure with toothpicks, if needed.

Preheat the grill to direct medium heat, brush the chicken halves with olive oil and grill for about 7-8 minutes per side, until the meat turns white, the bacon is crispy and the meat feels firm when you poke it with your finger. If you don't want to guess, 165F internal temperature will get you where you want to be.
