After my last smoketastrophe, my confidence level was pretty low. I needed a boost so I turned to my trusty Weber. I’d done several small smokes over indirect heat – a roast or two and some salmon. Yesterday, I had a taste for meatloaf.

Overall, it went well – took about 2 hours and it was delicious.

Ready for the smoker.

I did learn a couple of things – one is to get several sizes of the throwaway aluminum pans (hat tip to SilverWolf636 for his pics earlier today) – covering a rack with foil was a bit messy and way to flimsy. Also, I’m going to have to invest some $$$ in thermometers. My bride donated her Williams/Sonoma digital but one’s not going to be enough. I think that’s a big reason my last smoke was so forgettable.

While I bask in my modest success, wish me luck with the fare we procured yesterday from Costco.



What to serve for the Super Bowl? Dogs, burger, baby backs, spares, or butts? I'm only doing one until I get more thermometers.

We all have bad smokes. Mine was a turkey even my dog wouldn't eat. Nice to see you back in the saddle turnig out good food. It only gets better.
