Yesterday was one of the first days of the year here where I was off AND it wasn't storming or really cold (just really windy), so it was time for some flappers. In the morning I applied my rub, refrigerated for 2 hours & then sacked'em up with a salt & buttermilk brine for a few hours more in the 'fridge. I went with a combination of hickory & peach woods & smoked them at 275 degrees. I used my homemade sauce to hit them up with near the end & stuck them under the broiler for a few minutes to tack them up real nice. I also did up some twice-baked potatoes & got them in the smoker with the wings as well. All was good.
