Thanks to Silverwolf 636, Buck Wheezer, The Dude, and all the others who I'm going to do a tremendous injustice by forgetting to mention here (so thanks to everyone who ever posted pics or tips about a fatty!). I was supposed to have a "smoke-off" with a friend of my wife's who also owns a MES, but she had to back out for health reasons. Since I already had the ingredients for the fatty and a turkey breast, we are having another couple over. My ingredients for the fatty: Diced jalapeños, minced garlic, cream cheese, Monterey Jack, Panko bread crumbs, and a little cumin. It's on the smoker with mesquite pellets right now.
