    Great job well done! Nothing is more satisfying than making it yourself and seeing what a difference there is from your own and processed sausages; so much leaner, fresher flavor and the satisfaction of just plain creating it!

    Man that sausage looks great and for your first time. I know it's not that hard to put meat into a grinder but it sounded good. I do like that grinder and can my wife ask your wife where she got it from? I'm hoping for one like that in my birthday bag of goodies. Wednesday[​IMG]

    I used Thyme, sage, salt, pepper, crushed red pepper, chipotle, and parsley in roughly the following amounts:

    8 lbs of pork
    ~ 7 tsp of salt
    ~2 tsp of CBP
    1 1/2 tsp ground Thyme
    3 tsp ground sage
    2 tsp crushed red pepper
    1 tsp chipotle
    a palm full of parsley

    One of the first things I noticed in a side by side of some store bought sausage was that this was really lean. The store bought stuff didn't have close to the flavor, and the salt of the store bought was out of control.

    Mrs. Engineer (who could easily be a vegetarian) is always suspicious of sausages, but this is different. We know what went into it, and the taste was phenomenal.

    Looks great Dana, well done. Nothing like fresh breakfast sausage, sooo much better than store bought. Now you need to get a stuffer, if you don't already have one. Just think about all those sausages waiting to be made.

    MMMmmmm, sausage's.

    I haven't made any in years, I had a Hobart mixer / grinder at the restaurant and then I have a hand cranker (just looked in the garage and didn't find it) but you can't beat homemade.

    Yeah buddy!! Breakfast sausage was my first grind too. Gotta love it.. Now if I can get the wife to buy me a meat mixer [​IMG]
