OK so it is 0630 in montana and I was up kinda late last night..
after fretting, tossing and turning
I got up at 5ish and started the fire...

Light the fires and kick the tires..
here is the line up!

One Local picnic... 3.13. a lb..
Forcella meats out of whitehall (shameless plug)
Great Product and great prices if you can get it direct.. I went thru a local butcher who tacked on a bit of a fee for doing the drive for me because I got my order in late.. darn..



7.8 LBs.. BONELESS..

The other one is the " really how many people did you invite.." oh crap better get some more product."
one I got at Wally world that was .98 a lb...

I gotta say I'm interested in how the two meats compare taste wise and weight wise when this is all done and pulled.. I'm goning to keep them seperate for a comparison.. maybe a blind taste test..

I rubbed both of them with the Cherry Kool-aid Rub that just tastes so darn good.. and am looking forward to spritzing them down with 50/50 apple and capt morgans..



Here they are at 6am when everything got to temp and I started to make smoke..

I have a fattay in the making waiting for lunch time to be put on.. and a friend who is going to bring over two racks of babybacks done in his misteress's thai black rib rub... I'll try to coax out the recipe..

P.S. Why does the Taylor "weekend Warrior" digital probe NOT go above 212? that is just not playing fair.. But I did figure out what the lid NB thermo is finally doing(is 60 deg off!!!!!)

You dreamed of smoke, it woke you up, you succumbed to the smoke, now you're smoking ... a perfect start to the weekend if ya ask me!!

Looks like a tasty roast ya rubbed up. Hope it turns out great!
 
if you like the cherry taste like the kool-aid rub, DiSaranno brand amaretto has a nice cherry taste to it. i have been using it in the mahogany sauce. its nice.
 
OK a little tease as things start to temp...



this was after three hours and the first spritz... Modified it a bit fron the trad 50/50 to 50% capt morgans, 20% maple syurp 20% apple juice 10% molasses I like the color and the SMELL on the Hot meat is RAD!



This is after the little wally world special go to temp(it was on the Hot spot) 165 and into the foil with the heavy spritz!! also just before this at noon I added the Thai Black ribs.. Simmering down the mary for a mop and when the Pork went into the Foil a Fattay also showed up.. .sorry no photo yet... next spritz and check it on the Fattay page..

That was a very enjoyable day.. a great feast and I learned that good meat althought its $$$ is a fantastic buy once in awhile! and that RO lump is superior to that cowboy dtuff and KF briq... tried SoFlaQer's finishing sauce in the bottle on the table.. a little dab'illdo ya.. thats right..IT is fantastic! and stubbs for the less pureitanical... next time I'll make sides! All I seem to do is focus on the meat meat meat! gonna do Dutch's wicked !!
