OK so it is 0630 in montana and I was up kinda late last night.. after fretting, tossing and turning I got up at 5ish and started the fire... Light the fires and kick the tires.. here is the line up! One Local picnic... 3.13. a lb.. Forcella meats out of whitehall (shameless plug) Great Product and great prices if you can get it direct.. I went thru a local butcher who tacked on a bit of a fee for doing the drive for me because I got my order in late.. darn.. 7.8 LBs.. BONELESS.. The other one is the " really how many people did you invite.." oh crap better get some more product." one I got at Wally world that was .98 a lb... Stupid photobucketoperator... 7.9 LBs .. BONE -IN I gotta say I'm interested in how the two meats compare taste wise and weight wise when this is all done and pulled.. I'm goning to keep them seperate for a comparison.. maybe a blind taste test.. Forcella on right ,Wally on left. I rubbed both of them with the Cherry Kool-aid Rub that just tastes so darn good.. and am looking forward to spritzing them down with 50/50 apple and capt morgans.. Here they are at 6am when everything got to temp and I started to make smoke.. I have a fattay in the making waiting for lunch time to be put on.. and a friend who is going to bring over two racks of babybacks done in his misteress's thai black rib rub... I'll try to coax out the recipe.. Loads of Q/view to come.. P.S. Why does the Taylor "weekend Warrior" digital probe NOT go above 212? that is just not playing fair.. But I did figure out what the lid NB thermo is finally doing(is 60 deg off!!!!!) Happy Fourth!!!
