I've always wanted to do a Q-View. Just now getting around to uploading pics. I always by my butts de-boned from Costco (they come two to a pack). This one came from a local butcher. Rub is local, too: Another shot of the butt. You can see the mustard in a few spots: I have been on a hickory kick lately: Soaking the wood: I must've taken 15 shots in an attempt to capture the thin, blue smoke. This is the best shot I got. You can KINDA see it: Butt went on at 8:00 p.m. I prefer to smoke overnight, so there's no reheating at lunch time. Here we are at 12:00 a.m.: I misted periodically with orange juice. I usually use apple, but I only had orange on hand. At 3:00, we hit 170. I foiled the butt, added some more OJ, and went back to bed: I believe it was 6:00 a.m. when we hit 205. Here is the butt at that time: After resting in the cooler for several hours, the butt FELL apart. There was little fat left, and it was so juicy I couldn't keep out of it. I pulled it with my hands, added some more rub, and we were ready to eat: The surprise ending? I also smoked some baby backs. Started those late in the morning. Didn't get pics of preparation, but here's the finished product: We ate, fell into comas, and woke in time for fireworks.
