I put another rack of ribs in today. The first time wasn't all that great. I pit these in about 7:30 before church. I got home about 12:30 and was going to put sauce on them. I did the side that was up, but when I went to turn them over they wouldn't cooperate; they just started falling apart. These ones turned out great! That is the beauty of the electric smoker! Here is some Q-view for ya! I also grilled some zucchini, re-heated some leftover Dutch's wbb's, and the wife made some broccoli and a rice dish. The beer is a Kaliber, an NA made by Guinness.

I will try to post better photos in the future. We were kinda in a hurry to eat, so I didn't mess around with my flash and and camera settings trying to get better depth of field.

Sounds like a good dinner to me. What will you do differently next time? What kind of rub did you use?

I used Meathead's Memphis Dust. It was really good. I don't know I will change anything next time. We really were very happy with these ones. I want to try to do some other stuff though. May smoke a steak for an hour or so before grilling. Thinking of doing a brisket at some point. There's only my wife and I, and my dad lives next door. We don't need to do anything big. The first time I didn't let it alone enough. I was trying to check temps to know where to set the electric "thermostat". It's a "sealed" unit, so that was a bad thing opening it up and all. This time I just let it go, with the position I figured out the first time, and it worked great! About half way between low and medium seems to be about 225. I mostly got the smoker for doing ribs, but now I think I want to venture out. My wife loves hot stuff, so I think I'm going to show her some Q-view of some ABT's and she may want me to do some of them. Everyone is great here. I really appreciate all the knowledge and help, even if I am just an electric convenience smoker.

Glad to hear that you really liked it and will do this again. Your wife would like ABT's Im sure. Also if she likes hot stuff you can heat up the rub a little bit as well.

Try a fatty. They are pretty darn good also.

ABT's are very good. You can always smoke bigger cuts of meat and vacuum seal the leftovers we do it all the time.

There is also just the two of us here most of the time. I smoke large cuts of meat like sirloin tip roast and a butt here and there and just put it in a vaccum bags and freeze it so we can just take them out thaw and re-heat or use some of the meat for sammies. So you don't have to limit ypurself with the smaller cut of meat. A good vaccum sealer machine such almost come with a good smoker cause you can marinade with it as well as for freezing meat also. Then you can also buy your meat in larger quanities and save maoney there too.
