Hello there my fellow smokers! Last week I came home from work early to get ready to go to the visitation for my grandfather who passed away. When I got here I noticed that someone had mowed my front yard. Then I heard the mower going out back. I thought how nice of my 17 year old to do that for me.
Well I got in the house and sure enough there he was sitting on the couch playing on the computer watching TV. I looked out the back window and there's my neighbor, mowing my lawn and cleaning up the leaves. After I looked at my kid with disgust, I went out back and said "Rick, what are you doing?" He said, "Well I saw in the paper about your grandpa, and thought maybe you might be needing a little hand getting this done."
What a super guy he is! I told him to stop and that I'd have plenty of time to do it over the weekend (it really wasn't bad at all, except for all the dog poo). He said "No problem, just wanted to help." I said "Man, I owe you bigtime, don't I?" He mentioned that maybe next time I fire up the smoker maybe I could throw a little something his way.
No problem neighbor....
The wife is out of town this weekend with the two little ones. So me and the oldest have a full weekend of getting the "honey-do" list wittled down before the snow flies. In addition, today I'm smoking a small variety of things to payback the neighbor, have dinner, and stock the freezer. I've haven't smoked in a few weeks, so I figured I'd come back with guns a blazin'.
I started out with 2 chuckies, a #3 and a #4. I realized I was out of EVOO so I used Worsteschire Sauce and Montreal Steak Seasoning.
Here they are after rubbing. I stacked them on top of each other before wrapping in Saran Wrap and set them in the fridge for a couple of hours to marinate.
Using the Minion Method on the WSM with Seven Oaks lump and apple wood chunks. This picture is for mballi3011. He and I did an exchange a couple weeks back and he included a Florida Gator t-shirt. So once I washed the stink off of it (LOL just teasing, my Hawks lost today
) I promised I'd wear it for my next cook. Here's the meat going down.
The smaller one is on top with a rack of St. Louis ribs. The #4 is on the bottom rack.
I cooked to 165 internal, wrapped in foil and continued to cook to 205. I forgot to take a pict of the small one. But that one I shredded and put into a few vacu-bags and took to the neighbor along with some chicken and a few of the ribs.
Here's the big one getting ready to pull. Should've used a bigger dish. LOL
All pulled...
Nice ring, great flavor. All-in-all another successful chuckie smoke. Here's my bags for the freezer after a couple of sammies.
I'm beat. And I still got a ton to do tomorrow before she gets home. Cue the Darth Vader music here...
