All excellent points, and my thoughts exactly. My chickens come out at 165° and the dark meat is fine, but a bigger bird (turkey) is gonna feel the heat more next time. Being my first one, I was nervous, but since I'm a huge fan of brining, I don't know why I was even hesitant of a dry breast
