I am just wondering how many of you put a rub on a PB and let it sit over night before you put it in the smoker versus putting the rub on just before you put it in the smoker. I have been doing it and letting it sit overnight and the rub always seems to melt and be a bit and become a little wet. This just makes it a little harder to handle and I am wondering how much good it does. Do you think that there is an advantage to letting it sit overnight?
Another thing that I have heard is that the ingredients in a rub are actually oil soluble and it is best to coat the PB with oil before applying the rub. Most of you seem to be coating the meat with mustard. Which do you use and why do you think that it is best?
