Hi, happy to be allowed in this post site.   I have a lifetime of grilling but only around 4 years of really working on smoking.  I have a highly modified Char Griller offset smoker and really like it.  I am here 1st to tap into all the collective knowledge.. and 2nd simply because I just love talking to folks about what works.. and what doesn't.  I live on the Olympic Peninsula in Washington State in a small town that basically exists on the lumber and shell fish industries. I appreciate your welcome.  Thank you very much.

Thanks Disco.  But like all good newbies I think I will just listen for a while! LOL!  Lots to learn. I have a few years before retirement and figure this would be a great hobby that would keep me in demand from my kids and their families! *grin* (moms use guilt.. dads use food! lol)  What I love about grilling and smoking is that there is always something I didn't know and every cook is different from the last, without regard that you have experience with it. ;) What part of Canada do you hail from? Tomorrow I am smoking an 11 pound turkey, 2 racks of St Louis style spare ribs and 3 racks of some pretty awesome baby backs for some friends.  Practice for my ever expanding family! ;p

I am from Cranbrook in the southeast corner of BC. I beautiful little city in the Canadian Rockies.

The only thing about your post that bothers me is you haven't invited me to the turkey/ribs dinner!

I know you think newbies aren't ready to post. However, one of the best uses I have found from this forum is to post pictures and descriptions of my smoking project and getting feedback from the kind members of the forum.

Hello Kirk, and welcome to the forums!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Off site links are not allowed here at SMF per Jeff. Not that you have done anything wrong....just a little bit of FYI for new members!
