I saw this cooking rig at the firehouse when I dropped of the finished smoke sausages...this is a 30 gallon pot...

Thanks fumarone! Yeah, it is a tastey sausage. They use to make 100-200# a week at the restaurant when it was open.

IDS, Very impressive and a lot of hard work making all that sausage up. Looks delicious and great color on the smoked goodies !
Thank you Crazy. You are always kind with your compliments. The woods I used were Wild Cherry and Hickory....always a great combo.
 
Was a great 2 days of smoking weather too...lows in the 50's, highs in the low 70's. Humidity was in the 20's both days....with wall to wall sunshine. I worked on my boat while the sausage smoked. Got the EVA foam flooring installed today. I should be done with it this week. Tomorrow I remount the motor and re-rig everything.
 
I pulled my boat out a few weeks ago to get it ready as the lakes have opened up. Piss poor fishing weather since then. Windy, snow, more wind and snow. We got 5" of snow a few days ago, all melted off, but we are looking at 6+ inches tomorrow into Wed. I'm a fair weather fisherman and the lakes can get real bad when the wind comes up. I'll get out there one of these days!
