I have my wood on a rack with a cover but I'm finding that the wood still gets moldy and grows fungus. I'm looking for ways to prevent it . Wood for smoking can get expensive
 
Sounds like ya need more air flow, maybe build a rack with a roof on it and get rid of tarp.

I don't have a tarp on it. It's a cover that came with the rack and it only covers the top half of the full rack. The bottom is exposed and that's where the fungus and mold is growing. Can I just cut off that piece of the split and treat with vinegar? Will it be safe to smoke meat with?

Tarps are great for immediate needs like heavy rain but not for long term storage. Air flow is your friend smokerjim smokerjim has you covered.....get it covered😁.

By cover, Do you mean a roof over or just covered with a tarp ?? As smokerjim smokerjim siad... If it's a tarp then that's the problem.. You need air flow...

I guess it's kinda like a tarp. It was made to fit this rack it zips on the ends. It only covers half way down. But the part that isn't covered is where the white fungus is growing

Rain /dew isn't dripping off of the cover on to the wood in those areas ?
I suppose it's possible. I live in georgia where is pretty humid even when it's not raining. Would I be better of taking the cover off?

I'd just cut the end off before you use it

Personally I would just cut the end off before using it, does both sides of your stack get this or just the one side. Maybe that side doesnt get any sun, if so maybe try spinning your rack a little so both sides catch some sun and maybe dry it out.

Honestly I'm not sure on how much sun that side gets. It's worth a look . Thank you, youve given me an option to look in to
 
Natural occurance of rot and decay . If the wood already had a high moisture content when you bought it , a warming in temps will bring out the fungus growth . Maybe some of the pieces were sitting on the ground before you bought it ?

I'd pull the cover for starters .
 
I spray dish soap on plants outside , and around the patio . I'm not eating any of that stuff though . It's a great and safe fungus killer , smells good , and keeps the bugs down .
 
I would probably hit it with a wire brush when I got ready to use it, fire/heat will kill about anything.
