Mexican Style Chicken & Tri-Tip

Ok, messing with my new Chamber Vac, so mixed up some fresh Mexican style marinade. Vacuumed sealed some chicken & a tri-tip, and will let marinade fro 3-4hrs like this. Never used this type of seasoning/marinade on a Tri-Tip but lets see. Also seeing how much difference the vacuum seal makes on a 3hr marinade on the meats.

I will grill these up this evening, and post...........

Alright, Fire in the whole

Fired up the Scottsdale Santa Maria with some cherry wood. This should take about 45min or so....but here are some pics of the start.

Curious too see two things: One how the vacuum sealer did on a short (3hr) marinade. Two how Tri-Tip will turn out with a spicy citrus type marinade.

Alright, done. I grilled some veggies, and jalapenos, diced up the chicken and tri-tip. Then made some tacos with it.

Chickend was good, big hit with everyone. Tri-Tip was pretty good, was better then I expected with the citrus/spice marinade. Would definitely do this meal again.

The marinade seemed to penetrate the meat pretty good in that short of time, (3hrs). The vacuum sealer definitely speed up the process, both the chicken and tri-tip was juicy and good flavor. Could taste the orange and lime pretty well within the meat. So, I say a win for the chamber vac on this one.

Tri-Tip was pretty good, was better then I expected with the citrus/spice marinade. Would definitely do this meal again.
I've been thinking to make fajita style tri-tip.
At $4/# a lot less money than the meat scraps they call fajita and want $9/#
Tri-tip even made pretty good pulled beef.

After this cook, I say go for it. Tri-Tip is pretty good this way, I would do it again for tacos or fajitas. The rest of my crew enjoyed it, and said they liked it this way as well.

Post it up if you try it.
 
Looks great. I am in So Cal just North of LA. Before I retired I used to travel to Santa Maria in Central CA for work and found a small Mexican place that made the best Tri-tip and chicken that I would buy a family plate every time I was up there. I knew they cooked over mesquite but trying for years I could never quite get the marinade they used to be as good.

Today my wife and I traveled thru a small town of Filmore, CA and there was a small Mexican market that had a large pit outside cooking chickens and the smell as we drove by was intoxicating. We stopped by on our way home and a full chicken with rice, beans, tortillas and two salsas was $20. We bought two on the smell alone.

These plates were as good as if not better than my Santa Maria dream dishes. That got me looking back into the marinades and seasonings they used. I think I might have found what I have been looking for. If it is as good as I am hoping I will have a future post for sure.

Ah, Fillmore!! Used to live there 28 years ago before moving to Texas. Did you go to Segovia's Market? They had the best Tri Tip in town. I do miss that place.

It was Carniceria Y Mercado La Plaza market. I have driven thru Fillmore more times than I could count but the only thing I have stopped for is fire works around the 4th. I did ride the train a few times back in the day before they shut it down.
