My procedure right now his first grind is with the stuffer plate, mix in the seasoning, then freeze, grind with the appropriate plate.

2 steps

Would I add the seasoning to the Cunk meat before the dual grind and then blend by hand again?

Is it that big of a time saving?

It’s pretty nice. I don’t mix spices and grind but if I did I would mix with the cubed meat and then grind. The first plate on the dual grind is the kidney plate then it goes straight through final plate size. You can premium grind in one pass on any final plate size so yes it is a time saver.

What they offer now is an attachment for your existing grinder head. Back when I bought mine I had to buy the whole grinder head assembly for dual grind.

I also have the big #8. The down side to dual grind in the beginning was if you had a #12 grinder the dual grind was still #8. If you had a #32 the dual grind was still #22 I think that’s changed now with the attachments but I’m not sure.
