Got this whisk as a promo. Works pretty good and easy to clean.

Ah that explains the height baking in a rolled form.I had put the dough into my couche to keep it more "round" is one reason why it's "high".
Overall hydration is 94% so it's possible that it needed more (being winter/dry air here) but I'm also considering other factors.

Ciabatta roughly translates from Italian into slipper meaning a flatter loaf that spreads out on the sheet pan.
I've got a couple of those. They work pretty well. Minimal dough stickage.I have had these ones for years. (Dutch Wisks) I just ended up using it upside down. Old wooden spoon does the same thing. Old english baker told me not to waist money on new toys and just use wooded spoon upside down. Brings the dough together just fine and very little to clean up.View attachment 716279
