Good morning, my MES finally gave out and it’s time to replace it. I’ve been dreaming of building a wood smoke house for years so that’s my plan. Most smoking I do is cold smoking aside from some bacon once in a while. I’m looking for ideas, suggestions, and pictures are always great.
As it stands I’m planning on something in the 2’ square by 6 or 7 ft tall. I’m thinking a concrete pad with two or three courses of concrete block. Then build the wood structure on top. The area I have to put it is fairly level so I can really put a wood stove “down hill” from the box but I’d love to use a small, camp type wood stove as the smoke source!
Should I plan on using a propane burner as heat source when needed? Any thoughts on air intakes and chimney designs?

Don't give up on that MES quite yet. They can be brought back to life with a simple rewire and the addition of PID controller which will turn it into a smoker much better than when you bought it.

Depends on how it was rebuilt.The simple rewire completely bypasses the MES electronics and is directly controlled by the PID.

But if you're truly ready to get rid of it there's plenty of folks that'll take it off your hands for that reason.If you still have it hanging around the first week of November I'm going to be in the Freeport area.What size it?
