A guy I work with gave me a free drum smoker.

I have never cooked on one of these before but always wanted to try. Loaded it up with briquettes and hickory chunks.

Grabbed a couple yard birds, son wanted smoked chicken tacos. Cooked two that way I can have lunch for the week.

Massaged the birds with mustard and threw my favorite seasonings on them. Tossed them in the drum.

I gotta say a drum smoker is about as set it and forget it as they come. Dialed in my heat at 300 had the vents cracked about half and it ran steady the whole time. Now here is where I messed up I shredded the first bird and forgot to get a finished picture 😂 had food on my mind.

Shredded them up and threw them on tortillas with some fresh pico de gallo and guacamole. Thanks for sticking with me and for those that wonder about a UDS man they are easy to run. And hold temp really well.
