Mixed these up couple days ago. Baked yesterday. Selling this Sunday at market unsliced in half loafs.

(No not gave up on sausage making, hope meat prices come down)

Both are sourdough.

This one is fmf hard red/white & kamut with honey and garlic herb. Baked little longer to brown the crust for better flavor.

This one is plain hard white.

That looks great. I usually make a two-loaf batch and also freeze one, it freezes really well.
 
I double wrap bread freezer bags and freeze it. Take it from the freezer the morning of the mkt
My mother baked about as much bread as you on a regular basis. A trick she taught me is to take a frozen loaf and repackage in a clean and dry bag. I modified the instructions to defrost in the fridge to minimize moisture collection.
