I bought a Caso Dry Age 63 curing cabinet. My goal is to age fish. The fridge offers a minimum temperature of 2°C, which is on the edge but acceptable. Initial tests with the fridge set to 2°C showed that it does not function properly. Every 5 hours, the temperature would rise to 8°C in a periodic cycle.
The fridge is in service, and the main board has been replaced. The display temperature now rises to a maximum of 3°C, but they didn’t take measurements with an additional thermometer.
An interesting fact about this fridge is that the manual states that salt blocks cannot be used (even though everyone does) and that fish aging is not allowed. What could be the reason for these restrictions?
Does anyone have experience aging fish in this fridge? Has anyone managed to achieve stable operation at low temperatures? This fridge is also available under the name Batscher.
