    Looking for appetizer ideas...

Love the idea of burnt ends, but I have no time to make a brisket between now and then. Have never tried "poor man's burnt ends" using a chuck roast or something. Thoughts on that?

    Looking for appetizer ideas...

My daughter is graduating from HS and I am doing pulled pork for the party. I'm going to make the pork ahead of time, but I would still love the smell of rolling smoke during the party. Looking for some good appetizer/finger food ideas that I can make fairly easily throughout the day. I made...

    Freezing pulled pork.

I will be smoking a bunch of pork butts for my daughter's graduation party. Due to time constraints, I think my only option is to cook them ahead of time, pull the meat, vacuum seal and freeze. I have done this in the past and it's always "ok", but not great. In the past I poured the rendered...

    Smoked Pork Leftovers

I am smoking a bunch of pork for a "pre hunting season" party out at camp.  I would like to smoke the pork ahead of time for a couple reasons...I like it better left over and I don't know that I will have the time to do it at camp.  My thought is that I would smoke the butts this Sunday, then I...

    My First Beef Brisket...

Sorry, no pics.  (I didn't have the smoke ring you had, that's for sure!)  BUT...the burnt ends were fantastic.  Thanks again! Just ordered pork butts for next weekend...I may have unleashed an animal here.

    My First Beef Brisket...

Well...the brisket turned out great.  The only suprise was that it was done for lunch instead of dinner, but not necessarily a bad thing.  Over all I would give it a B+.  Thanks for all the help and advice.  Now...to try some OYSTERS!

    My First Beef Brisket...

More specifically Knifebld...did you use the entire point and did you just add some seasoning/sauce and put it back on the smoker in a disposable foil pan as it looks in the photo? Thanks again.

    My First Beef Brisket...

I was thinking of doing a "full packer", but 13 - 14# seems like an aweful big piece of meat for 12 people.  Is there a difference between wrapping with foil or butchers paper?

    My First Beef Brisket...

I'm new to this site and to smoking, so forgive me if this isn't where I'm supposed to post these questions.  This is the only place I could find a spot to post something.   :) I am smoking my first brisket(s) this weekend and I have a few questions that I hope I can get some help with.  The...

    Let the fun begin!

I have a couple runs of ribs and couple runs of pork butts under my belt.  The first time around I tried to do too many ribs and the butts were too big.  The second time around they were fantastic.  I had a lot of butt leftover so I vaccum sealed it to eat when it's 40 below zero here in the...

    Let the fun begin!

Thanks for the input!  I hadn't thought of doing a "dry run", but probably a good idea.  I do have a wireless thermometer that I plan on using as well.

    Let the fun begin!

Hello. I'm new to smoking meats myself, but I love to cook and look forward to this new adventure.  Just this weekend I bought my first smoker (18" Webber Smokey Mountain) and I can't wait to try it out over the 4th of July.  I'm going to spend some time over the next couple weeks looking...
