    I took the deflector out of my pb 1100 for running to hot, runs better without it. I use the chimney cover to control heat somewhat, can you adjust yours by twisting it up or down.

    Without thermometer you could probe the brisket with a skewer or something like that, it will slide through like butter when its done.

    Welcome to smf,i wont be much help with your chorizo, I never made it but yours looks really good. You just proven you dont need expensive equipment to make a quality product. I'm sure someone will jump in and help with your question. Lots of great pe6on this site.
