Update on the mailbox mod. Got it working with three holes drilled in the door and it is working well. It's the most consistent smoke I have ever had with my MES. It burns so evenly now. Thanks everyone for the help!
One More question....should I try some aluminum tape on the bottom of the mailbox so that airflow is only is only moving front to back or will that be stopping the air flow more?
ok everyone, thanks for all the input. Built a mailbox mod and set it up for a rib smoke yesterday. Lit my pellets and let them sit in the mailbox for about 10 minutes to get some good embers and closed it. The smoke would never reach the cook chamber and looked like the smoker wasn't drawing...

Point taken. With my MES 40” I had to put the ham in the #3 spot with #2 rack removed. Hopefully all will turn out well for an early mother’s day feast! May have went slightly larger than your step by step single but it was .99 a pound!
This was one if my mental notes from Saturday not to do again. Lol. The pan can be an enemy if not used properly....lesson learned. Now the butt was direct on rack 2 with a pan underneath on rack 3 to catch drippings, which worked well. Oh, and my ThermoPro will be here tomorrow thank...

I felt it was big but didn't realize how big until I placed in the smoker. I wonder if it was cut in half if it would work well? Actual size is 17"x12 1/4".
