    More Sourdough Starter

Great thread. I'm about to start a new starter. Had one going a while back that was pretty good, but blew it off because I just got too busy. Now, thanks to this thread, I read about drying and preserving a starter! Wish I had known that before!! lol Looks good after the rise. Anxious to...

Wearing Gloves, do most people do this while BBQing?

I do the exact same thing as Jake. Cotton gloves are cheap, washable, and enough insulation for handling meat on the grill or on the counter, and the nitrile over them keeps them dry and relatively clean.

    The Microbiology of Meat Fermentation

Yeah, hard to believe the case hardening comment, but for the most part the first video seems pretty good. I am not finding part 2 or part 3 anywhere. Is it really a 3 part video series?

    Hello from N. Texas

Greetings from near Dallas. Found this forum searching for Coppa. Plan on curing a Coppa, but having now seen one smoked on a thread in this forum it is now something I MUST try! I cooked on Weber Kettles forever it seems, and even smoked briskets and ribs on them, but I bought a Camp Chef...

    Trying to clone Conecuh sausage

I'm glad to see that someone woke this thread up again. We used to not be able to get Conecuh west of LA, but they recently expanded into Texas. I've been bringing it home from Mississippi for 15-20 years. I love the smaller diameter Hickory Smoked and Hot types. Only sausage I use in...

    Sliced coppa roast

Well, I finally got my patio expansion finished and moved my smoker and grills back to where I can actually use them again! Now I can have a go at this!
