    How to add #1 cure to bacon?

    Bought a pack of thick cut bacon strips. Prob around a dozen strips. Thinking about applying brown sugar and dehydrating. How much #1 cure should be applied. I’m guessing mixed in the brown sugar.

    Dehydrated Bacon

    Do you fry the bacon before dehydrating or do you put raw bacon (uncooked) straight in to the dehydrator. It would be eaten within a couple days kept in the fridge.

    I’m guessing you’d want to eat it sooner rather than later to prevent spoilage due to the fat? If kept in fridge, how long can the dehydrated bacon be kept? Forgot to ask the obvious. Do you fry the bacon first and then dehydrate or put bacon uncooked straight in to the dehydrator??

    Now I need a smoker 😆 Making some bottom round jerky as I type. Smells so good. Butcher shop $25.99 for 1 lb of jerky. That’s nuts!!!

    Farmer killed it, skinned it and cleaned out the guts and cut it in half. We just made roasts, ribs and eventually sausage. With 5 people we were done quick.

    Just finished butchering a hog. $150 for a hog ain’t bad! We cut it up and filled our freezers. Would pork loin jerky be any good? What marinade works with pork?

    Teriyaki Beef Jerky

    Beef jerky ( whole muscle) is coming along nicely. House smells wonderful! Been dehydrating for 5 hours so far. Using a Cosori dehydrator which is doing a good job.

    We are butchering a pig next Tuesday. Wondering what if any pork meat is good to dehydrate? Or best to stick with beef. Any recipes?

    Beef is marinating as I type. Tomorrow noon, stuff goes in dehydrator. This is my first attempt. I held off on the meat tenderizer. Maybe next round. See how it chews with the few teeth I have!

    Pork Egg Rolls

    I made another batch today with chicken bouillon, sugar and bacon grease ( bacon up). Boiled cabbage in chicken stock and then sautéed in bacon grease with ground pork. I did add garlic and onion powder to the pork. Let’s just say it smelled better and tasted delicious. No 5 Star Asian spice...
