    I agree. Your MES heat element should provide plenty of hot air rising in the box to the top vent, creating a draw that pulls in smoke from the generator. As for a stack, I just use a single tin can that fits in the top vent, just to keep the smoke off the control box. No problems so far.

    The second thing I ever smoked was a turkey. I have a 30-inch electric smoker, so the turkey has to be relatively small, 10-13 pounds. I used this recipe and it worked really well, but I'm sure the recipes above will give you great results too...

    I did the first actual smoke using the mailbox, for pulled pork with two boneless shoulders (Costco, about 7.5 pounds each).     Question: even if you somehow introduced bacteria through a thermometer probe, or took too long to get the meat past 140, won't cooking pulled pork to 200 IT kill virtually anything that might be a problem?
