It appears the lower half of the smoker was caught on fire. (based off the char marks on the smoker walls) The fire was out by the time I realized it was off.
I just tried the smoker again, and it is still not working. Won't even power on.
I was smoking a whole chicken at 275 and I noticed I was getting heavy smoke. I opened it up, and saw nothing out of the normal. Come back out 30 minutes later and my smoker is off, and won't turn on. I remove the chicken and put it in the oven and take a good look at my smoker... And it appears...
I am not spritzing. The top stayed nice and moist for the first 4 hours or so, and then it turned to a nice bark.
My internal just hit 177* and I decided to wrap it, since it started to stall out.
Local grocery store had a great sale on brisket ($3/lb) so I picked up a 9lb to try for my first.
I rubbed it down last night and put it in my MES30 at 945am. Started it at 230* and bumped it up very gradually to 275*
5.5hours into the smoke I'm t 170* internal. I'm going to attempt to smoke...
Took exactly 11 hours to reach 200* internal temp. I forgot to take a picture of the final product, but it tasted great! As soon as I picked it up to move it off the tray, the entire shoulder just fell apart, in a good way :)
