Did you never notice that it takes "forever"  for the meat to get to the last 10 degrees?

TSP is more of a degreaser than a polish. I don't think it would help that "burnt spot" which is really oxidation from the heat. No, do not intend to clean the entire interior. I have only cleaned the racks, water pan, door and window.

I clean my MES 40 with a solution of trisodium phosphate (TSP) you can get it at the hardware store. You may want to wear gloves because it "de-fats". But, it works really well.

Yes, my bad FFS (Fat Finger Syndrome).... It is actually 250deg NOT 350degs. Good catch!

Well I took S2K9K's advice... when to Wally World (aka Wal-Mart) and found Apple, Cherry and Hickory wood chips!

The selection of wood chips around here is dismal at best. We have a Home Depot and a Lowes and neither have anything other than Mesquite chips. So, I wanted to ask if there is a preferred provider for wood chips in various "flavors".
