I think I skipped Roll Call when I signed up. (ooops)
Got a Smoke Hollow #6 for Christmas. Just seasoned it this morning. I need to buy a cover (so I don't have to keep carrying it to my workshop when it's gonna rain) and a digital thermometer. But the seasoning went well. :)
37 degrees here today. I live about 8 miles east of Niagara Falls, NY. About the time I was done with seasoning, it started to rain. So I carried the smoker into my workshop after emptying the wood box and making sure the whole thing was cool to the touch. Don't need to even THINK about a fire in my workshop.
I know the cover is a good thing, but do I really have to worry about the smoker getting rained on occasionally?
Recently retired from a university IT job, I have time. Good thing because now that the workshop is finished I have to get started on building all of the kitchen cabinets for a gut remodel of the kitchen. My wife likes to make sure I'm not getting bored. :) So while I'm making sawdust, I can run that smoker.
OH! A question...
The smoker will hold a fair amount of meat. Can I smoke stuff and then FREEZE it? Or is that sacreligious or something? Or do you generally smoke 2 chickens, some ribs, a pork butt and a brisket and then just eat it all? :) If that's the case, I need a SMALLER smoker hehehhe.
