An improvement over the ol WSM for sure. I was growing frustrated babying that rig. So here is my new love on her inaugural smoke.
Got a package of pork shoulders from Costco. Pulled them out. Rinsed them, patted dry, and hit with my rub. Then on to the Rec tec they went. 225 degrees. Right now we are 11 hours in. Just opened up for the first time for some apple juice spritz. One is at 163 one is at 157. Going to let them go all the way, pull them off, foil, and rest. Will update with final shots a little later!
