What is the difference between summer sausage and beef stick??
 
Not really much of a difference. Basically, if it can stay out at room temperature without going bad, it's summer sausage. For me, beef stick is more like pepperoni. Italian summer sausage? LOL

Larger casing size 2" to 3.5"

Beef stick
casing size
18-21mm or 1/2" to 3/4"

Vac sealed ok to leave out . Once opened keep in fridge. Both are commonly a cure 1 product

It doesn’t need to be fermented to leave out? Just cured and vacuum sealed?

As long as its kept under vac seal and its not like 99* in your kitchen. Once you open it you have to fridge it.

Fermented SS is another entity
