Me and the boy were In the shop cooking most of the day……well cooking steel and doing some fab work…. This is one of the fab projects, a spring loaded door latch for the heat treat oven…..

So after a long rewarding day we had make up some good grub to recharge……so we winged it!!! Seasoned up som Costco wings with Jeff’s rub and the. On the top rack of the Weber @ 450, tossed in some seasoned wrapped corn…man oh man the new Weber is magic on chicken!

I wasn’t much of a salad guy frowning up but my wife has changed that….she makes me really enjoy them!!!!

It’s the fine details right down to the smoked extra sharp cheese…..
 
Man that all looks good! Those wings look about perfect - very nice color on them! I'll bet they were delicious...very nicely done sir!

That tall looks fantastic Civil. There isn't a thing on that plate I wouldn't devour. Chicken looks great, corn is excellent (we did the same yesterday), I do love me some 'shrooms, but that salad would have taken the show for me. Very nice!!

Thanks Red, I have discovered the top rack on the new weber is the money maker for bird parts. The area is like a horizontal volcano in the gasser.... Our Costco started stocking these wings for 2.68/lb now...... I have a feeling many more will be roasting in the future!
I eat with my eyes, and that post just filled me up. Very nice work on winging it.

Thanks Robert! Love grilled corn on the cob, a little butter and old bay and yum!! The salad could have been the show but how does one put wings, corn and stuff shrooms on it and have any room left for salad...... oh a second plate that's how....LOL!

I find, this helps expand my experience bank and to get a more versed knowledge of cooking the particular protein. When I was testing cooking beef ribs I went through at least 15 racks of ribs cooking them all different and noting the differences. That brought me to my 265 for 3 hours.....I used this for probably another 10-13 racks and then something happened, and I ended up foil wrapping a rack for 40 mins or so in the oven at 140..... and Now I wrap them all for 30 min at 140 after the 265 for 3 hours. I'm 6 racks into this way now and I'm sold, but know I know I have wiggle room when things aren't ideal.

Same for boonless chicken breasts for my wife's salads, I can do them at 235 for 3 hours or 265 for 2 hours both wrapped for 15-30 min after and have virtually the same results. I always shoot for the 235 and 3 hours but as the ones I have on right now the wife told me 2 hours before dinner she wanted smoked chicken, so they are on at 265 :-)
