Did two racks a ribs fer me an momma yesterday, used only apple wood an the latest version a "Smoke in the Hollar" rub (which I beleive is now a completed master piece!), Taste was fantastic, smoke was very nice, only one piece left over fer lunch on Sunday! After the smoke I let em rest a bit an applied my honey/butter glaze, didn't use anythin elese fer a suace cause they didn't need it!
