Was At the store and I got bit by the Cinco De Mayo bug. Making a bit of salsa to go with my breakfast. And Chips LOL

Total count was 75 tomatoes, 11 onions and about 20 jalapeños. I threw in 12 zucchini for snacks.

Can I ask are you roasting & smoking them to give your salsa that extra kick?

I’m smoking the produce to give the salsa a nice Smokey flavor. I have charred the vegetables on the Santa Maria and jt is good too but i prefer the smoker version. I can also fit 1 or two more tomatoes in my smoker then I can on my Santa Maria LOL

The salsa came out pretty good. Great smoke flavor. Only used about 10 of the Jalapeños as they were pretty Hot. Used 50 tomatoes and all of the onions.
 
looks great, How much will that make? and how do you store it to keep?
Thanks. I don’t Know the volume. It seems at least 2 gallons. This batch is for a lunch tomorrow. But the wife wants me to make more so she can preserve some via water bath.
