Yesterday I smoked two racks of St Louis Style ribs trimmed down to spares and a 6.5 lb butt. Seasoned with SPOG as I was out of Memphis Dust and didn’t have everything to make more. Used KBB along with oak and cherry for the wood. I got a late start so 275* for the temp on the WSM.
I usually don’t wrap ribs but I decided to do it this time for about 1.5 hrs. Total time for the ribs was about 5hrs and they were pretty dang good. Sauced with SBR. Not quite fob but just a little tug.
I’m not new to smoking but this is my first butt. Since it would be on the bottom rack I decided to put the fat cap down. Hit the stall at 164* so I covered the pan with foil. Total time was 8.5 hrs. Pulled it and that’ll be some lunch for the week for me.
