Ya about have to burn it black to ruin it, once ya do though, well... Burnt sugar taste bad.
Practice makes perfect on this stuff, I was burning the ends bad the first few times.
Get the thinnest smoke you can.
 
Thanks Chile! It was a huge hit, I'm glad I put a little too much cayenne on some...They were just for me!:rolleyes: I will continue to practice until I perfect this. By far, the tastiest mistake I've ever had.

350°-375°, don't try to go higher and speed up the cooking time, you'll just burn the sugars.
Thinnest smoke possible.
Thickest and meatiest bacon you can find.
Get happy with the brown sugar, on the upwards facing side don't be afraid to heap it on.
It'll just get turned into a candy glaze.
