Just the 2 of us so 4 drummies are good for us.

Went with Gospel rub and a light rub of olive oil.

Using oak pellets and temp of 350*

Pulled at IT of 168. Put in bowl with a lid for while.

Those look awsome. Question? Does your pellet smoker put out good smoke at that temp? My Rec Teq basically quits putting out much smoke after around 250. Just curious.
 
Those drummy's look great! That is a solid rub. I think our favorite rub from Matt is the Holy Voodoo. I haven't tried it on beef but we've had it on everything else including several veggie medleys. Good stuff!

Voodoo is delicious. It’s great on beef. We’ve used it on chucks for pulled beef and tri tips. So tasty
