Picked up a slab of center cut pork ribs from butcher on way home from work yesterday for $4.99 lb Put on a rub, fired up the Weber Kettle, and cut the lawn. Just as soon as I put my ribs on a quick rain shower came out of nowhere, followed by the brightest rainbow I’ve ever seen. 5 hours later came the best ribs I’ve ever made. Cooked indirect with slow n sear, used royal oak all natural briquettes, with some apple wood chunks. 3 hours bone down uncovered, 2 hours bone up in foil. Very tender, and tasty. Bones easily pulled clean out of meat.
