Good Day Everyone!

Just wanted to introduce myself - My' name is Bill & I'm very new to smoking, although I've been grilling for years.

I recently (this last week end) completed my first smoke, an 11lb pork shoulder which, if I do say so myself, came out. great!

I currently don't have a dedicated smoker, but used an improvised setup on my Char-Broil 4 burner grill.

Did a simple mustard coating followed by my wife's improvised rub.  Took about 17 hours running around 220-235 degrees. & then sat foil wrapped & bundled in a cooler for another 4 hours.   

It was like butter!
