Half of the filets are from a side of salmon I bought at Kroger. 3 of the filets were caught in the fall by my coworker. Both wild Sockeye. The Kroger salmon was much mushier in texture. It was actually hard to handle. My coworkers salmon was in much better condition. Difference between super fresh and salmon that who knows is how old, right?
