Hey everyone, I'm VERY new to smoking. I live in Miami, FL. Just picked up a MES 30" last week from BPS and am stoked to do a big cook. I have a bunch of sea trout in the freezer so I started with a few fillets and made an excellent smoked fish dip! Came out great! I am having a bbq in a week and will be trying brisket and a pork shoulder for the first time! I'll make sure to post pics and ask for help. Looking forward to getting some great insight about my new smoker and some great recipes!
