Hello. I’ve been creeping, reading posts for a while now. Thought I’d introduce myself. My name’s Steven. I live in West Virginia. I’ve been smoking any meat I can get my hands on for over a decade now. I have a commercial freezer that I plan on turning into a smoker (been planing for 5 years now!)and am just about to get into curing meat. (If anyone has a good walkthrough of turning an over under fridge into a chamber please send it my way.) I love both the science of cooking and the Jazz that’s involved. I worked in a professional kitchen before health issues forced me out. Using a smoker is easier on me and keeps me in the cooking game. Looking forward to joining the community and learning all I can.
