I got a Brinkmann Smoke’n Pit for my birth day last May and have smoked 3 shoulders so far. Despite not having a clue what I was doing and fighting a fire for whole days to try and maintain the temperature somehow they turned out fine. I was having a hard time keeping the temperature steady and it was way off from side to side. Well a couple searches on the net and I found you guys! I only joined this site a few days ago, but have already made a baffle, tuning plates, extended the chimney to the grate and made a charcoal basket from expanded metal! I also bought two digital thermometers and have two high quality bi-metals on the way. I also learned about the menion method on here. Well thanks to all the people who posted about these mods I ran a test fire yesterday and was able to maintain perfect temperatures for over six hours with only a ten degree difference from side to side. Using the menion method I only opened the fire box a couple times to add smoke wood. Thank you all! I learned more in a few days of reading on this forum than some people I know that have been smoking for years.Greg
