OK, Here we go.
I have not had a chance to introduce myself yet. My name is Vic and I am originally from El Paso TX. I moved to Knoxville TN seven years and three days ago. I am an expert griller and cook. Cooking was the only way to spend time with my Mother growing up. My Mother owns Stella's BBQ in Anthony NM.
I have fabricated and built six or seven very large trailer smokers as well as restaurant capacity smokers. I however am not an expert smoker. I started smoking with a Brinkman bullet smoker in the late summer. I am hooked! "Line and sinker"
My wife just bought me the char-Griller dual since I was going to have to order parts and rebuild the grill. (You know how that story goes!!) I have just seasoned both sides with a large can of cooking spray. I ran smoke through it for eight hours yesterday.
I have made changes as per the video on google. I am looking forward to sharing some of my experiences with you.
Just reading and going through your different sites and becoming a member of SMF has helped me greatly. I figured that as long as I am hear so much I might as well get to know you guys.
If you have any suggestions let me know. I am looking into a dual probe wireless thermometer. Some of you have suggested the ET 73 but when you read the reviews over half of them are horrible! i just dont want to waste money if you know what I mean.
