I already posted in the roll call section, but figured that, since i do not know what i was doing, in regards to navigating this site, that the post probably got lost somewhere. Long story short, i wanted to learn the fine art of smoking, but have not a clue as to where to start. After reading some articles (and the e course), i decided to give it a go.....lol, from what I have read, some of you guys are going to have a chuckle. Ok, very basic smoker design (200 litre /44 gal drum cut in half, couple of bricks and a wire tray from an old camping stove), i brined the chook for about an hour in salt sugar and lemon juice, covered it in butter and dropped it on the rack. I just used regular barbecue briquettes, with sticks from a fruit bearing tree down the back yard. Now is the time for the chuckle......here are the photo's.

The resultant bird was delicious, even though it was mostly guesswork (no thermometers, half assed approach to building the thing, too much beer while cutting the drum etc etc). But thanks guys, without your help, we wouldn't be having smoked turkey for christmas dinner
