First brisket of 2024

So it was finally warm enought to cook this monster packer brisket. Bought last August at $.99/lb (woo hoo!), and stored at -20f since. It was a 22lb packer brisket.

Put on at 10am at 225*, pulled and wrapped at 170*it at 12:30am. Back in and pulled at 206*it. The point probed butter soft! 22hr total cook time. Rested in oven (170*) for 6hrs (longest I've ever let it rest).

One of THE best briskets I've made so far.

Course ground black pepper
Salt
Pit boss brisket rub

Fully sliced for meals and vac sealed after a night in the fridge after eating. And a nice 3lb bag of cubed pieces for chili. And cold brisket is nearly as good as hot.

Yeah, this brisket was 80% point.

I missed out... my local kroger had Angus briskets on sale at 4.99/lb. Then last week they marked them down to .99/lb (WTF!!!) I would have bought 2 or 3 and stuffed them in the freezer.

What are those white chunks on top of the pieces that are vacuum sealed?

Fat, very nice, Kroger had a sale $1.99lbs wife picked up 2, I'm sure they won't be that purdy lol

I always add a little tallow to each vac bag. It helps with moisture when reheating in sous vide.

I'm heading to kroger tomorrow am to talk to the meat dept Mgr about buying 2 or 3 more Angus briskets. I'm trying to get a better deal than 4.99/lb on buying 2 or 3.

I may go for 3. Cut one up and use it for roasts. It's cheaper than roast prices.

I scored 3x 17lb angus packer briskets today. The manager marked them down for me to 2.00/lb!
THAT is how you do it! :D


Provided there are still briskets around after the TX panhandle and all those cattle/ranches burned up, I should be seeing briskets $0.99 - $1.99 a few times as Memorial Day and then 4th of July come up!

I have a 10cu' freezer that I can gladly store up to 5 more packer briskets if I ever see them at .99/lb. I'll buy a grinder and make burger meat!
