First Brisket--A Success

Nice! I still haven't tried a brisket. I've had so many dry briskets at restaurants outside of Texas. Including yesterday. At a homebrew demo event, we had a local smoker doing butts and briskets. Great flavor but way too dry.
That's the whole reason I started smoking I the first place. After leaving TX I was always disappointed anytime I ordered brisket. So I bought myself a smoker and that was the first thing I ever smoked.
There is a BBQ joint near where I live. The owner was having trouble getting his brisket right, so he paid some guy from Texas to come here and show him how to do it. I don't know who the guy was or what his reputation was in Texas, but he sure knew how to teach someone how to make brisket. It's the reason I don't attempt brisket anymore. I can just take a 20 minute drive and have a spectacular brisket dinner for less than $10 at Papa Buck's BBQ Restaurant. I have several friends and relatives that do not live in this area who insist we go there for brisket every time they come here for a visit.

Well, you planning the next Brisket Cook yet ??

I'm looking around Gary. But first I have a 10 lb pork butt and burnt ends from this brisket to do for a friend and his family coming for a visit.

Then i have a 10 lb butt I'm making for pulled pork. An old friend of mine makes knives and I'm trading the pulled pork for a hardwood handle and brass guard he going to make and put on an old butcher knife I'm converting to a hunting knife.

Then I'll get serious about brisket #2.

Give it a try. You'll be amazed how good it can be.

I know I'm from Texas and Brisket is the #1 BBQ choice but I do love Pulled Pork I probably smoke as many Butts as Briskets. In fact I have 2 Butts in the freezer now.

Yeah Gary. For me pork butt is king but now i know I can do a brisket and just how delicious it is!!
