Finally did buck board bacon!

Smoked up my first bbb today, can't believe I didn't do this sooner! Started out with Bears recipe. I smoked it a little warmer than he called for, but as low as I could go. Took about five hours for the biggest chunks. The small piece sooner and I tried to wait on slicing it, but failed. Spliced it up and fried it, oh my gosh was that good! If you haven't tried making your own yet, do it! I stole the skewer bacon hanger idea from someone here, worked great, thanks whoever you are.

I think we like the greasey old Sow Belly here.
But my batch of BBB will be fine for recipes, especially with Beans!

I've got two Pork Bellies coming along, and started some Back (Canadian) Bacon last night.
I be Maken Bacon!
Humm, 2 pounds of Jerky marinading in the Fridge.
And a hankerin to make some Dutch's Wicked Beans. (I have to reserve some for the wife. She thought the last batch was too hot. There just is no pleasing some people...)

Can't say how it is for you, but for me finding pork belly at this point would be striking oil..

I need a membership to even check costco/sam's club in person so ..not overly thrilled about that ! Not with GFS so inexpensive!

I've seen it at Costco, but never priced it.
 
I get my bellies at Sam's Club. Ain't cheap by any means....
I'm not allowed in Costco.
The wife and Daughter conspired and only got 2 cards. So I'm never allowed unless escorted.
Probably just as well, our Costco use to be nice. Now it's just an over crowded bunch of crap heads. I don't do well around crap heads. So I stay home.
But Walmart is fun here. The people here are some real Walmartians. Funny!
And I do have my very own Sam's Club card!

I cut up the last of my timming's this afternoon, and got a tray of Dutch's Beans in the smoker as we speak. The 'Trimmings' are the smoky edges and ends. Really great in beans.
I've been Mr. Busy Butt today.
Rolled my bacon's I'm in progress with. Cut up 4 1/2 Pounds of Pork Loin for Jerky, with two pounds marinading overnight. Then the Bean's...
I can't figure out why I'm so pooped. I didn't do nothin all day.
Must have been the trip to Walmart. Yeah, that probably pooped me out.

I'm gonna mozy out and check my smoker...

I think I'll make some beans for our work Christmas pot luck. Usually make Franklin's pinto beans, but I think I'll try Dutchs this time with the bacon.
