There's no place here that does really good Dan Dan noodles, so I periodically make a bulk batch of the meat mixture, vac seal it in single portions, and eat it for lunch regularly. I made five pounds of freshly ground pork - 80% pork cushion, 20% backfat. I add in sautéed bok choy, a Sichuan pepper-based sauce, a handful of peanuts and a marinated ramen egg.
